From ungrafted vines of the lowland and mountainous Zakynthian vineyard. The ripest grapes are selected.
Vinification:
The harvest takes place in the first ten days of September. The vinification of White Muscat begins earlier, during which the stems, after the grapes are pressed, remain in contact with the must to achieve the maximum potential of aromatic extraction.
Then follows the pressing of the Augustiatis grapes, which are added to the tank with the White Muscat where the grapes will remain in contact with the must (skin contact) for a short period of time. Then, there is a separation of grapes and must, pressure, continuation of the alcoholic fermentation and stopping it when the sugars reach the desired levels to create this semi-dry wine.
