Vinification:
The harvest begins in the first ten days of September. For the Muscat variety, a short pre-fermentation extraction is carried out. Alcoholic fermentation takes place at a controlled temperature where it is then halted to ensure the remaining sugars. After the end of vinification, batonnage follows with the fine lees in the tank, for more body and intensity of the aromatic potential.
